Catalysts are what you spend to level up, and the demo scatters 35 of them across the two chapters in rising tiers (C3 early, C6–C7 late). How many Catalysts each pickup grants isn't stored in the demo's level data, so price out a target level with the Catalyst Calculator and see where to spend picks in the leveling guide.
